Terroir : All the vineyards of the Côte de Beaune can contribute to produce this AOC except Volnay, Pommard and Aloxe-Corton. We regularly buy grapes in Pernand-Vergelesses, Monthélie, Auxey-Duresses, St-Aubin, Santenay, Maranges or other good source of grapes. It's always a Coup de Coeur wine.

On arrival at the winery, the grapes are carefully sorted to keep only the healthy grapes and optimal maturity. 30% whole grapes, 70% destemmed grapes.
Aging: 14 months (including 5 months of mass assembly) 10% in vats. 90% in barrels (of which 15% new oak)
