Nicolas Rolin, Chancellor of the Duke of Burgundy Philippe le Bon, decided to found the Hôtel-Dieu de Beaune in 1443. As early as 1452, nuns from a brotherhood in Flanders were able to welcome and care for the first patients in the Great Hall of the Poor. This Cuvée gained in surface in 1963 thanks to the bequest from Madame Maurice Pallegoix, in memory of her husband who was mayor of Demigny. The oldest plots in this Cuvée are Les Cent Vignes (54% of the planted area), and Les Teurons (19%), which were respectively planted between 1953 and 1975, and 1950 and 1955.
