"The NV Fino Tres Palmas is pushing biological aging to the limit, with 10 years under flor, getting close to an Amontillado, with a light brown color and a nose of hazelnuts intermixed with the marine and saline notes. It reminds me of varnished wood, with a very sharp palate, intense and complex. The flavors stay in your mouth for minutes, no doubt helped by its 16% alcohol. This is a selection of four barrels I'd call Fino Amontillado. Drink 2013- 2020."

The Las Palmas classification, as defined by Manuel Maria Gonzalez-Gordon in his book "Jerez-Xérès-Sherry, applies to those Finos that stand out for their cleanliness, finesse and delicate aromas. The number of palmas is in proportion to the age of the wine. This definition perfectly describes these special wines and is a classification which was practically no longer in use until Gonzalez Byass began to employ the technique once more three years ago. In order to select these unique wines this year, Antonio Flores was assisted by Sarah Jane Evans MW. Together they tasted more than 150 casks from the Tio Pepe soleras, looking for the very best wines whose excellence, elegance and finesse can only be discovered with intuition, knowledge and expertise of such experienced tasters.
