Voilà literally means “there it is”, something you can show to people that you’ve just made. The intention for this wine was to be enjoyed in the summer with friends and family (or on your own if that suits you better)! The base wine consists of 40% Gewürztraminer 40% Pinot Gris and 20% Viognier. Fermentation took 12-14 days with the use of foreign yeasts. Once fermentation was complete the wine was then blended together and aged on its fine lees for 10 months in stainless steel. I find the Voilà to have aromas and flavors of pineapple, green pears, yellow apples, honey suckle, lime, rose petal, and subtle apricot. This bright and cheerful bubble is well balanced with crisp and clean acidity that finishes slightly dry.
