The top wine of the estate is the 2012 Ventoux Il Etait Une Fois. Comprised of 80% foudre and concrete tank aged Grenache and 10% each of barrel aged Mourvèdre and Syrah, it’s more firm, focused and serious than the other 2012s and will benefit from short term cellaring. Currants, blackberry, mulled spices, leather and ample earth-like qualities flow from this medium to full-bodied, focused and beautifully complete Ventoux.
