This sparkling rose is made from 100% Nebbiolo. After a soft, slow pressing to extract the delicate pink colour the juice is fermented in 80% stainless steel tanks and 20% in 700 litre French oak barrels. Following the secondary fermentation in the bottle the wine is then aged on its lees for roughly 18 months. This wine is soft pink in colour with a fine bead of mousse in the glass. The nose is one of explosive red fruit and white flowers with just a hint of residual yeast. In the mouth, the wine is long with a lingering freshness. The wine finished with just a hint of austerity that is a hallmark of the Nebbiolo grape variety.
