Emiliana Organic Vineyards uses hand-picked grapes from Chile's Casablanca Valley to produce this fantastic sparkling wine. The Valley is known for its cooler maritime climate which allows grapes to slowly ripen and therefore develop tremendous flavours. A blend of 77% Chardonnay and 22% Pinot Noir was fermented in stainless steel for a period of 5 months before undergoing a secondary fermentation. The charmat (or tank) method was used rather than the more traditional fermentation in the bottle. This method preserves the freshness and intensity of the grape's original flavours rather than obfuscate them with autolytic factors. The other advantage to using the tank technique is better quality control and consistency because everything happens in one tank instead of inside of many individual bottles.
Suggested Pairings: This wine pairs well with with mild cream sauces, raw and cooked shellfish, fresh and fruity salads, sushi, and desserts made with red fruits and chocolate.
