Located amongst pristine nature high up in the Uco Valley, the Portillo winery uses mostly locally-sourced materials such as stone from a nearby quarry, and a gravity-flow system. Most of the facility is actually concealed underground in three levels. The grapes are hand-picked and destemmed before fermentation in stainless steel. The nose is rich with dark fruit such as plum and blackberry. On the palate, fresh redcurrant and black cherry supported by sweet, round tannins that give way to a long, satisfying finish with hints of cinnamon and clove.
