Culture
The vines are cultivated according to organic farming or in conversion. Therefore, we have banned weedkillers and our soils are ploughed and scraped. To protect our vines, we use sulphur, copper and various plants, but no synthetic molecule.
Terroir
The subsoil is granitic (GRANITE of Clisson and GRANITE of Château-Thébaud). The soils are very filtering, with lots of gravel. These characteristics allow an early ripening.
Wine making process
Grapes are harvested manually, then are carried to the wine cellar with much care. The pneumatic press is filled by gravity, and grapes are not crushed. A very slight racking enables the yeasts which are naturally present, to induce fermentation. This cuvée is left on its lees until spring, without any racking.
Food pairing
Served between 12 & 14°C, this floral and fresh wine is perfect as an aperitif or with a meal. It’s an excellent accompaniment to shells and crustaceans.
