Boudin’s 2011 Chablis Fourchaume delivers some of the same unusual suggestion of roasted peanuts and peanut oil as found in the corresponding generic bottling, here allied to juicy fresh lemon and apple as well as richly-satisfying salted, herbed chicken stock and oyster liqueur. Hints of fruit pip and iodine add piquancy and further complexity in a sustained if slightly rustically phenolic finish. This ought to merit following through at least 2018, and quite possibly well beyond.
