Merlettaie is made from the variety Pecorino grown on the steep slopes of the Piceno Apennines. Pecorino is rare, precious and able to exhibit a strong character. The variety was virtually extinct in Le Marche until the 1980s but has increased in plantings fourfold since. The name comes from Pecora which means sheep. Pecorino Romano cheese is indeed made from sheep’s milk. The grape variety Pecorino is described as fresh with acidity and delicately herbal (think sage, mint and thyme). Merlettaie displays intense notes of grass, hawthorn blossom and vanilla. It is fresh and sapid on the palate. This wine spends a brief six months maturing in barrel but does not display overt oak character in the glass. This full bodied white is best paired with mushroom pasta, Thai dishes, cheese and tomato based bruschetta. Certified organic and vegan.
