Deep underneath the vineyards of Champagne in northern France, there are miles and miles of caves dug out of the chalky soils where millions of bottles champagne undergo their maturation in a perfectly cool, consistent climate. When they are ready, the bottles are "disgorged": the sediments removed and the corks put in, ready to be popped for your next celebration!
