For the first time in the winery, 1000 kg of grapes from the oldest wines were chosen and pressed in the pneumatic press. From there 500 liters came out after settling, which were transferred to a stainless steel vat for controlled fermentation that did not exceed 16º, and it fermented spontaneously until October 29, 2018. It did not carry out the Malolactic. It remained in a stainless steel vat, and then aged for 3 months in two amphorae of 200 and 300 liters, until bottling on December 11, 2020.
