I love the subtleness of the white Semillon 2019 D.O. Quijada, produced with fruit from old vines from the Quijada family in Apalta. It fermented in neutral oak barrels with native yeasts and matured with the fine lees for 12 months. The oak is much better integrated than in previous years, and it has a serious profile with moderate alcohol and integrated acidity.
