Blasted Church Merlot Cabernet 750ml

Tasting Notes: Our 2014 Cabernet Sauvignon Merlot blend has a bouquet of blackberry and dark plums with toasted cedar notes and a hint of tomato leaf and black pepper. Luscious blackberry and plums shine through on the palate with complexing black pepper and cured meat notes. It’s lovely and rich with smooth integrated tannins that finishes with a bit of menthol. Pair with red meats such as roast lamb or BBQ’d steaks, smoked meats and even dark chocolate.

Winemaking

All lots of fruit were picked and vinified separately. After de-stemming the whole berries underwent a cold soak in a stainless steel tank to extract colour. The wine underwent full malolactic fermentation in barrel and was then aged for 14 months in both French and American Oak, with only 16% new oak to allow the grippy tannins and flavours to balance out. The wine was then blended in tank, filtered and bottled. This year the Cab Sauv was quite ripe and gives more dark fruit aromas to the blend whereas the Merlot and Malbec add bright red fruits. The leathery toasted notes from barrel ageing hold it all together nicely.
