Harvest Notes
The 2012 vintage was a classic one for sparkling wine. Cool days and cold nights in September led to solid acids and pronounced fruit development in the grapes. This was true for all three varieties used in this blend: Pinot Noir, Chardonnay and Pinot Blanc.
Winemaking
The grapes from each vineyard were fermented separately and blended weeks prior to bottling. The Pinot Noir was destemmed then quickly pressed which created a small amount of colour that can be seen in the final product. The Pinot Noir added the berry fruit component to the wine. The Chardonnay added orchard fruits and tropical flavours and the Pinot Blanc added the acid structure and balance to the wine. Our sparkling wine was made using the traditional method of refermenting the wine in the bottle followed by riddling and disgorging.
Winemaker’s Note
Colour: : Slight pink, salmon colour.
Bouquet: Apple, pear, mineral and almonds.
Palate: Crisp apple and pear with some nutty, yeasty characteristics rounding out the bright finish.
Food Pairings: This Sparkling is at home as an aperitif or served with canapés. It also pairs well with shellfish or try white fish with beurre blanc sauce. Soft and semi-soft cheese such as Farm House Cheese’s “Lady Jane” would also be welcome partners.
