PRODUCTION AREA: Barbera d'Asti DOCG
HANDLING: The first fifteen days of October
VINIFICATION: Fermented in steel for about 10-12 days.
REFINEMENT: After malolactic fermentation, 60/70% of the whole mass enters French oak barriques where it will stop for at least twelve months. The remainder will complete maturation in stainless steel tanks for the same period. After assembly and a further rest in stainless steel tanks for about sixty days, the wine is bottled and will wait another thirty days before entering the market.
PAIRING: Appetizers, pasta and risotto, second courses of white and red meats, seasoned cheeses. Its strong acidity makes it perfect with particularly rich and tasty dishes.
Clear and transparent garnet red wine. Pleasantly fruity scents with light wood and vegetable nuances. The palate is dry, full, with remarkable texture and freshness, in line with tradition. Intense and long-lasting.
