
An unaged Mezcal from San Baltazar, produced by Cosme and Cirilo Hernández using Espadin agave. Bottled by Alipus, whom specialise in seeking out great Mezcal from smaller producers.
Nose: Gentle smoke and agave distillate with a mineral, tinny edge.
Palate: Great mouthfeel, more roast (burned?) agave and balanced with sweetness. Earthy, but not particularly vegetal at all.
Finish: Sugar cane smoke.
