All estate grown grapes and they undergo similar start to the red wine cycle. Grapes are cold soaked for 24-36 hrs then fermented on skins. The maceration time can vary from a minimum of 10 days to 18 days. After alcoholic fermentation and grapes are pressed off skins, they undergo 100% malolactic fermentation and then aged in French barrels for a minimum of 12 months.
