Storing & Cellaring

I have had the privilege to taste wines from the 20’s, 40’s, 50’s, and 70’s and so on. Most of theses wines came from an impeccable cellar. The hallmark of this cellar is that it is exceedingly cold, 40F, which essentially puts the wine in almost suspended animation.

If there is one thing I can tell you, is please make sure your cellar is as cold as possible, obviously without damaging your wine. I am aware within the city of Vancouver and its environs we do not have the privilege of European style cellars built into our homes. Those of us wishing to add a wine cellar to their home or apartment will have to build it.

There have been a plethora of books have been written on the subject, the best book I have read on constructing a cellar is "Cellaring Wine" by Jeff Cox.
