Your wine selection and required quantity will vary depending on dinner style, season, food served, and most importantly, the kinds of guests you are planning to entertain. If planning a buffet, choose simple wines that will pair well with a variety of foods, but for a multi-course meal you may want to match a wine to each dish. Luncheon
Since food at lunch tends to be on the lighter side, opt for lighter, fruitier wines, and consider choosing ones lower in alcohol: otherwise, you may end-up indulging in an impromptu post-meal siesta.
Cocktail Party
These are always tricky: are people just dropping by, or are they staying for the night? What style of hors d’oeuvres will be served, heavy or light? Count on about 8 hors d’oeuvres per person per hour, and keep in mind that an all-night hors d’oeuvre-heavy cocktail party is almost like a dinner-buffet: the focus will not be as much on the wine as it will on the conversation, so go for more neutral wines that will have wide crowd appeal and pair well with most munchies.
