48 hours cold maceration (10 ºC) prior to fermentation. Skins were gently pressed before fermented dry. Malolatic fermentation took place in barrels. Matured for 18 months in 35% new and 15% 2nd fill French and 25% new and 25% 2nd fill American oak barrels. Ruby garnet with purple edge in colour. Red fruits, vanilla with some spice on the nose. Cherry,
strawberry, tobacco and plum follow through on the palate. Good acid integration with smooth tannins. A rich complex mouth feel compliments the long smooth finish. Pair with duck or rabbit.
